Moroccan classics

Couscous, tajines, pastillas, chorba soups… These are the great gastronomic classics which are found almost everywhere in Morocco, from the coast to the mountains, in the capital and the even the remote villages.

Yet depending on the region, it will not be the same couscous, nor the same tajine. During your visit to Morocco the whole of the Atlantic coast will place the emphasis on fish couscous and tajines, very often a simple and delicious freshly grilled sardine over a wood fire, while in the mountains, the emphasis will be on meat, very often lamb, barbecued lamb or mutton. In the dunes of the south, you will mainly find vegetarian food with vegetables as the main ingredients (carrots, potatoes or even cabbage).

In Marocco, you will often find the famous round bread, a classic, absolutely delicious hot straight from the bread oven with harissa, a few olives or even just a drizzle of olive oil or argan oil.

During your trip to Morocco be sure to try the famous oriental pastries which are very rich and dripping with honey and sugar but are so delicious to have with a glass of tea.

Finally, on to what makes such delicious breakfasts in Morocco; the many different types of Moroccan pancakes, thick and thin, with or without holes, drizzled with local honey and served with freshly squeezed orange juice. Delicious! To be enjoyed in moderation if you don't want to sleep straight after!

Pastries

Mint tea

This is the cult drink, which is drunk whilst inhaling noisily and is served by pouring the tea from a height to make a stream of frothy tea in a small cup.

Originally mint tea came from the south of the country, from the sandy hills of the desert where the nomads drank boiling tea to lessen the difference between body heat and outside temperature to avoid overheating. So they sweated far less and consequently felt cooler.

This tradition remains to this day and you will find stands, tea rooms and cafés serving mint tea everywhere throughout Morocco.
