Be'er Sheva is Israel's "door to the desert". 

My suggestion:
The best day to visit the town is Thursday, when there is a Bedouin market which is unique in Israel and only happens once a week. 
My review

Be'er Sheva may well be the fourth largest town in Israel, and home to one of its best universities, but you have to acknowledge that it's not very dynamic. There are a few sites to visit, such as an Ottoman mosque and the palace of the governor who reigned over the town at the beginning of the 20th century (which has since been turned into the Negev museum of art).

Be'er Sheva is usually a stop-over if you are going to visit the desert, or are returning to Tel Aviv or Jerusalem. The town is more somewhere that you stop for a few hours to satisfy your curiosity than somewhere you choose to go to. In my opinion Be'er Sheva is not an essential place to go during your trip to Israel.
